Among all the traditions of autumn, the olive harvest is undoubtedly one of the most fascinating.
The harvest usually begins between October and November, when the olives have reached the perfect stage of ripeness. It is a tradition that has been passed down through generations and is still carried out with patience and care.
Large nets are carefully spread beneath the olive trees before the olives are gently removed by hand using small traditional olive rakes. Every movement is delicate, helping to preserve both the fruit and the trees while respecting the rhythm of nature.
